Le but de notre étude était de caractériser les habitudes et troubles du sommeil en lien avec le travail en horaires atypiques chez les artisans pâtissiers, La plupart des études traitant du travail de nuit ou posté concernent les professionnels de santé

, Le temps de sommeil total (TST) était de 6,3 ± 1,3 h alors que le TST idéal était de 7,0 ± 1,2h. La sieste était un moyen pour 58% des producteurs (75 ± 13min) et 23% des vendeurs (45 ± 8 min) d'augmenter leur TST /24h. Cependant, 6% des femmes vs. 5% des hommes rapportent une dette sévère de sommeil (>90 min) et 11,5% vs. 9,3% une dette modérée (>60 min). 26,2% des pâtissiers rapportent une insomnie chronique, principalement les femmes de 45 à 54 ans (31%). Enfin, 29,5% ont des signes évocateurs d'apnées du sommeil, mais seulement 9,1% ont un score de Berlin élevé. Conclusion : la plupart des pâtissiers ont des difficultés à s'adapter au travail en horaires atypiques et rapportent insomnies, dettes et apnées du sommeil, Méthode : Il s'agit d'une étude épidémiologique évaluant le sommeil (habitudes et troubles), via enquête téléphonique, des employeurs et salariés de la pâtisserie artisanale. Résultats : 2622 questionnaires complets de 1313 hommes et 1309 femmes âgés de 36 ± 14 ans, ont été analysés. 1397 commençaient le travail avant 7h, 1225 après, p.-
