Abstract : Experimental design using Response Surface Methodology permit the weil understanding of interactions between LP-s components and its concentration optimisation. At 25°C, SCN- peroxidation is increased by glucose and LPO. GOD/glucose, GOD/pH and LPO/pH interactions affect it. 85.5 UI.I-1 of GOD, 1.5 g.I-1 of glucose and 3930 UI.I-1 of LPO with an initial pH value of 6.5 compose optimised LP-s, with an initial SCN- concentration of 50 mg.I-1. Inhibitory activity of the optimised LP-s was experimented on the growth of L. monocytogenes DSM 20600T, of B. thermosphacta DSM 20171T, of C. maltaromaticum DSM 20700T and of S. putrefaciens CIP 80.40T on single or mixed cultures, at 4°C, in TSB-YE medium or fish model medium created for this study. ln TSB-YE medium, in single or mixed cultures, L. monocytogenes DSM 20600T is the most affected by the LP-s. ln model medium with single cultures, the growth of the four strains is partially inhibited by LP-s. ln model medium with mixed cultures, the growth of S. putrefaciens CIP 80.40T, L. monocytogenes DSM 20600T and B. thermosphacta DSM 20171T are totally inhibited ; in those conditions, LP-s had a bacteriostatic effect on the growth of C. maltaromaticum DSM 20700T
