Les protéines du lait de jument: caractérisation physico-chimique et recherche de peptides inhibiteurs de l'enzyme de conversion de l'angiotensine 1

Abstract : Breeding of dairy mares appears to become of great interest, because equine milk could be used in the cosmetic, therapeutic and dietetic fields. A good knowledge of the physicochemical properties of equine milk makes it possible to consider new valorizations of the components of this milk, in particular of proteins. The objectives of this work were a better knowledge of the whey proteins and caseins of the mares' milk and quest for possible bioactive peptides. The proteins can be denatured by the mode of industrial preparation of milk; so that this study was carried out with a raw milk stored at -20°C just after milking. The analysis of electrophoretic profiles of caseins allowed one to distinguish milks of the various studied mammals, as weil as milks of various breeds of mares. A study of the whey proteins by monoand two-dimensional electrophoreses has shown the heterogeneity of IX-lactalbumin (glycosylated form; structural modification in time) and lysozyme (glycosylated form). A sensible method allowing Schiffs staining and microsequençing on membrane was developed with bovine milk proteins in order to identify glycoproteins present in small quantity in milk. This method has highlighted the presence of glycosylated K-casein in mare's caseins.
