Emulsions inverses trés concentrées : influence du procédé et de la formulation sur leurs propriétés rhéologiques

Abstract : This work deals with the preparation of highly concentrated inverse emulsions with the help of a semi-batch (discontinuous) process. The emulsification process can be divided into two main steps, an incorporation step and an homogeneisation step, by far the most demanding from an energetic viewpoint. Three coherent scaling laws have been obtained independently at the end of the emulsification process : a relationship between the elastic modulus and the energy consumption per unit volume (G'~Ev0,6), a relationship between an average drop radius and the energy consumption per unit volume (Rm~EV-0.3) and finally a relationship between the elastic modulus and an average drop radius (G'~Rm-2). This last relationship is not in agreement with the PRINCEN model. A semi-empirical structural model, based on the idea that the highly concentrated emulsion elasticity is due to Van der Walls forces, has been proposed and leads to a dependency in agreement with our experimental results. The study of the time evolution of the average drop radius to a pseudo-equilibrium state, that depends on the surfactant concentration only, suggests that the initial destabilisation process is related with a dispersed phase permeation phenomenon
