Evaluation du risque de transfert des hydrocarbures aromatiques polycycliques du sol vers le lait chez le ruminant laitier

Abstract : Polycyclic Aromatic Hydrocarbons (PAH) are persistent organic molecules emitted by anthropogenic activities. The soil contamination resulting from the deposit and accumulation of the PAH is the main way of exposition for grazing cows and thus for the whole food chain. In this work, the contamination levels of PAH in soil from pastures located in the vicinity of emission sources was specified. It leads to an experimentation aiming in the study of the transfer of the PAH and their main monohydroxylated metabolite to milk following a chronic exposure to soil contaminated with fluorene, pyrene, phenanthrene and benzo[a]pyrene. The results showed that 2 % of the PAH associated with soil and brought via a rumen canula were transferred to milk under the 2-OH fluorene, 3-OH phenanthrene and 1-OH pyrene monohydroxylated. Moreover, less than 5 % of the given parent compound was measured in the faeces during the exposition period. This result and the increased monohydroxylated metabolite concentration in milk suggest the absorption and biotransformation of the PAH. An in vitro experimentation using two radio labelled compounds (phenanthrene and benzo[a]pyrene) was conducted in order to know where the main PAH extractability from the soil occurred in the ruminant gastrointestinal tract. The results obtained from the developed model suggest that less then 10 % of the radioactivity was removed in the rumen. Other studies are required in order to determine where the main extractability in the body occurs
